Authentic South Indian Sambhar

Ingredients:

  • Toor dal – 1 cup

  • Tamarind pulp – 2 tbsp

  • Mixed vegetables (carrot, drumstick, brinjal, etc.) – 1.5 cups

  • Tomato – 1 chopped

  • Sachi Sambhar Masala – 2 tbsp

  • Turmeric – ½ tsp

  • Mustard seeds – 1 tsp

  • Curry leaves – 8-10

  • Dried red chillies – 2

  • Hing (asafoetida) – a pinch

  • Salt – to taste

  • Oil – 2 tbsp

  • Water – as needed

🔥 Instructions:

  1. Pressure cook toor dal with turmeric and mash well.

  2. In a pot, boil vegetables with tamarind pulp and salt.

  3. Add mashed dal and Sachi Sambhar Masala. Let it simmer.

  4. In a pan, heat oil, splutter mustard seeds, add curry leaves, red chillies, and hing — pour the tadka over sambhar.

  5. Serve hot with idli, dosa, or rice!

Sachi Tip: A pinch of jaggery adds balance to the tanginess.
